A
- Agranu Wine: An extremely sweet Andorian wine.
- Amazake: A fermented rice drink originating from Japan, Earth.
- Andorian Ale: This Ale hails from the Andorian people. It is usually a light crystalline color with a hint of blue hue to it. The alcoholic content is higher than that found amongst Earth ales.
- Andorian Redbat: Native to a moon of Andoria, the redbat is considered by some sections of the Andorian people to be a delicacy and others to be disgusting. It is often eaten simply, preferred by many in a stewed form with vegetables, particularly the Earth Potato.
- Alvas: A grape-like fruit found on Bajor that grows naturally.
B
- Bolian tonic water: A Bolian drink similar to regular tonic water, it's said to have properties that calms nerves. It is used in mixed drinks the way that regular tonic water is, and some swear by drinks such as gin and Bolian tonic water.
C
- Charred Tundral: A small creature found on the ice plains of Andoria, the Tundral is served in a blackened, or charred method usually with an abundance of spice. This dish is reputed to give a healthy case of indigestion to those unaccustomed to it.
- Circassian Fig Dessert: Circassian figs, a small fig, are coated with sugar and roasted over open flames before being served over chilled yogurts. Many times the dish is accompanied with a variety of berries from different worlds. This dessert is a light dessert, often eaten after a heavy meal to soothe the stomach.
- Cyprion Cactus: This spiny plant must be carefully prepared for ingestion, however the pulp within it has a texture which many cultures find is similar to that of a mammal (red meat). It's form is usable in many methods of preperation making it a very managable food stuff. Common ways of it's preparation are broiling, baking, sauteed, and fried with various seasonings.
G
- Gellafruit: A soft, oval fruit about the size of a small eggplant or large avocado, native to Ortala. Afficonadoes of fresh gellafruit describe it as having "a very juicy, pulpy taste which changes in sweetness depending on when in the day it's picked." It can be eaten raw, either peeled and sliced or unpeeled, and an alcoholic cordial can be distilled from it as well.
- Gladst: A Klingon plant dish, known for it's high protein content and the length in which it can survive under adverse enviromental conditions. It is similar to a seaweed or other stringy vegetable. Often served with sauces to flavor it, it is known to absorb nearby flavors very well.
- Green Harvest: A bright green colored alcoholic drink from Trill. Similar in color to Aldeberan Whiskey. It has a rather sweet taste to it.
K
- Karridy: A Napean tuber similar in texture to a water chestnut. It is traditionally served chopped into long thin sticks. Traditionally served raw, it is almost intolerably sour with a bitter aftertaste. Most often it is pickled, which removes the aftertaste and imparts a spicy flavor.
- Katterpods: A Bajoran plant which transplants well to other worlds and is a major source of agriculture, since it is a versatile food crop. A shipment of spoiled katterpods caused the illness of an entire troop of Bajoran Militia on New Bajor in 2378, necessitating a team of Starfleet and Militia officers from USS Marathon and USS Vanguard to handle their duties in an ecological survey for the New Bajor colonial administration ("On the Wing")
- Ktarian Chocolate Puff: Ktarian chocolate puff is a large dome-shaped dessert made from 17 different kinds of chocolate originating from the Ktarians.
- Ktarian Merlot: A dry red wine of the Ktarian people.
O
- Ob'taree: This Vulcan 'fasting meal' is akin to many subsistence diets, this high-vitamin, low-intake food is designed specifically for Vulcans in a ritual fast. Ob'taree has even been used in scouting missions by the Federation as it is capable of sustaining a humanoid in small quantities.
- Oskoid: A delicacy from Betazoid, the Oskoid leaf is a plant with dark yellow and purple veins that is reputed to keep an individual warm through the sap located within it.

- Plomeek soup: A Vulcan vegetable stew.
- Purple Sunrise: A fruity drink from Trill. It is most noticeable because of it's dark purple color and the streak of black that runs as a swirl through it. The purple part of the drink is incredibly sweet, while the black streak that runs through is incredibly bitter to counter it.

- Raktajino: Klingon coffee, served steamed or iced.
- Romulan Ale: A highly intoxicating alcoholic beverage that, although once illegal, is now available due to the Federation Alliance. In 2378, LTJG Stiyo found a replicated, syntheholic version of it to be a "vile, reprehensible substance".
S
- Squill: Squill is a key ingredient of the planet Balancar's exportable commodity syrup.
- Synthale: Synthehol is a chemical derivative of ethanol which can be rapidly metabolized by most humanoid species and therefore does not produce intoxicating effects. Imbibing synthehol has been described as allowing one to enjoy the intoxicating effects while retaining the ability to easily dismiss them. Synthehol can generally be used as a replacement for any beverage in which ethanol would normally be an ingredient. Some people complain that drinks using synthehol do not taste like the real thing. Produced by many different cultures in the Alpha Quadrant, it was later introduced to the Gamma Quadrant. It typically resembles different types of beer.
T
- Tameron Sourdough Bread: Made with Tammeron grain, the Tammeron Sourdough Bread is a melding of cultures. The natural properties of the grain are enhanced and produce a sweetness in the sourdough which is highly enjoyed by many cultures. Often it is accompanied with a slightly salty spread to help offset the flavor. When freshly baked, many Humans often comment on its similarities to the 'doughnut'.
- Tea: Tea is a beverage that is typically served hot. It is made from the leaves of plants that are steeped in hot water. There are numerous blends and types of tea from a number of worlds.
- Darjeeling Tea: Originating from India on Earth, darjeeling tea is a common blend served to this day. This blend was a known favorite of Stiyo during his tenure aboard USS Vanguard. He was introduced to the blend by Tren.
- Tuapan plum tea: Originating on Napea, this sweet, flowery tea is made from the blossoms of a species of tree that only blooms every 10 years. Tuapan plums, unlike the tea, are quite bitter.
- Jumja tea: From the same plant that produces Jumja sticks (and jumja syrup, and jumja juice... ), this Bajoran tea is a spicy-sweet favorite of many Bajorans. The taste has been described as similar to a sweet chai mix, and is a favorite of Prylar/1LT Nyhs.
- Tuber Root: An Andorian food that is high in calories. It is stringy in texture and often is served as a pastry that has been baked or fried.
- Tulaberry wine: A blue alcoholic beverage made from tulaberries, and produced by several Gamma Quadrant races such as the Dosi and the Karemma.

- Vulcan mocha: Similar in taste to Terran coffee, it has a lighter taste and a greenish-brown color. It is made from the g'teth plant.
Y
- Yamok Sauce: An important condiment of the Cardassian people, it has found its way into a larger selection of foods from other systems, particularly Terra. Yamok Sauce's unique chemistry prevents it from being properly replicated, requiring it to be made from scratch and thus increasing its rarity outside of the Cardassian system.
